Persimmon, pomegranate and pumpkin seed salad

This is my go to fall salad. Its healthy & tasty! What more could a mama ask for?

Ingredients:

2 Fuji Persimmons sliced

1/2 cup Pomegranate seeds

2 Blood orange in segments 

Citrus vinegarette to taste

1/4 cup Pumpkin seed garnish

Goat cheese (optional) to taste

2 heads of Butter lettuce
Method:

Rinse butter lettuce and break apart into pieces. Toss in vinegettte. Top with persimmon slices, blood orange segments, pomegranate seeds & pumpkin seeds.

Citrus vinegettte : add a half cup of orange juice to a half cup of olive oil. Add salt & stir until emulsified.
