Slow cooker Chicken Soup

My number one rx is chicken soup. When I started the gut healing GAPS diet, we ate chicken soup for breakfast, lunch and dinner and it really was a profound healer! Here is my lazy way of making chicken soup.

Ingredients:

1 whole chicken

3-4 stalks of celery diced

4-5 carrot sticks diced

2-3 cups of chopped winter squash or summer squash

2 onions diced

1 whole garlic peeled & diced

1 inch of ginger finely chopped

1-2 bunches of greens ( kale, chard, spinach etc.)

1/4 cup of chopped parsley

a splash of apple cider vinegar

himalayan sea salt

Method:

Put your whole chicken in your crock pot and fill with water, add a splash of apple cider vinegar. Throw in your chopped carrots, celery, squash, onions, garlic and ginger. Let that cook for a few hours until your vegetables are soft. Every once in a while, try to push your chicken apart, you want those bones exposed to get as many minerals as you can from those bones! When everything looks cooked and the chicken has fallen apart and been mixed around the whole soup, go ahead and add your parsley & greens, let that sit for 10 minutes. Pick out the bones in a bowl and reserve to make a chicken bone broth again later. Once your chicken soup is done, take it out of the crock pot eat and refrigerate the rest. Throw your chicken bones back in the crock pot with water and apple cider vinegar and cook that for a few hours to get a batch of straight chicken bone broth.
