Coconut Bread ( Grain Freee)

This bread is a treat for us, I learned to double the recipe.

You can also slice & toast it for yummy spreads like liver pate, egg salad or cheese & anchovy spreads.


1 cup coconut butter

1/4 cup coconut oil

5 eggs

1 teaspoon salt

3/4 teaspoon baking soda


Melt the coconut butter in a double boiler until it has melted. Preheat oven for 350. Add eggs, baking soda, salt and coconut oil to blender and blend. Once the coconut butter is melted in a double broiler add it to the blender & blend. Spray oil on bread mold and pour batter in mold. Bake for 20 minutes and cool in fridge for 10 minutes.

Note: You can add cinnamon & raisins to make this a cinnamon raisin bread
