Chicken Liver Pate

Chicken livers are high in protein and a rich store of folate, which is important for fertility and helps prevent certain birth defects.  Livers are also loaded with iron to give you energy and lots of  B vitamins, most importantly  B12. This nutritional profile makes them a good choice for anyone prone to anaemia. Chicken livers are also one of the top sources of vitamin A, which helps eye health.

We dip carrot sticks in it or spread on coconut bread toast.


1 lb chicken livers

2 large yellow onions

4-5 garlic cloves

1 bunch thyme

1 sprig of rosemary

1 tablespoon lemon juice

1 cup white wine

1 stick butter

salt to taste


Melt 3 tablespoons of butter. Saute onions and livers in butter until slighty brown. Cook, stirring occasionally for about 10 minutes. Add remaining ingredients and cook until liquid has evaporated. Blend in blender until smooth. Pour pate into ramekins or moulds. Melt additional butter in pan and pour on top to make a seal on top for preserving. You can add a pretty leaf and slightly submerge in butter for cute design.
